1 1/2 c. flour
3/4 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. ground allspice
1/4 tsp. ground cloves
3/4 tsp. salt
1 c. sugar
2 medium parsnips, peeled & shredded
1/4 c. canola oil
1 egg, lightly beaten
1/2 tsp. vanilla
1/2 c. chopped walnuts, roasted

Directions:
Directions:
Stir together the first 6 dry ingredients in a medium bowl. In a separate bowl mix together the sugar, parsnips, oil, egg and vanilla. Slowly stir the parsnip mixture into the flour mixture. Stir in nuts. Spoon batter into a greased loaf pan. Bake at 350º for 55-65 minutes. Remove from oven, cool in pan on a wire rack.

This is wonderful for breakfast, or for packing along on a picnic or woodcutting or hiking day. It's not too sweet, but the spices give it some great flavor. Spread cream cheese on it for extra special. Makes a fun gift also - it's so unexpected!
