2 eggs
1 tsp. salt
1 tsp. vanilla
1 c. sugar
2 1/2 c. flour
1 tsp. baking powder
3/4 c. margarine, softened
Frosting:
1 lb. box of powdered sugar
3 T. softened margarine
1 tsp. vanilla
2 T. milk
food coloring

Directions:

Mix thoroughly the margarine, sugar, eggs & vanilla. Blend in flour, baking powder & salt. Cover; chill in fridge at least 1 hour. Heat oven to 400º. Roll out dough 1/4" thick on a floured surface. Cut into desired shapes. Place on ungreased baking sheet and bake for 5-6 minutes. (They're best when slightly underbaked.) When completely cooled, frosten with buttercream frosting: stir together all frosting ingredients. If too thick, add milk, one tablespoon at a time until it's spreadable but not runny. Divide the frosting into several small bowls and add desired food coloring to each.

The secret to the success of these cookies is to roll them out fairly thick, and to underbake them. I usually freeze them after baking, and then we have a decorating party several days later and frosten them. Be creative and have fun! Merry Christmas!
