1 medium onion
oil
1 lb chicken steak
1/4 lb shredded cooper sharp cheese
pre-made dumpling wraps (can substitute egg roll wraps cut into 3 inch circles)
2 egg yolks
1 c ketchup
1/4 c hoisin sauce

Directions:
Directions:
Dice onion and caramelize in oil. Cook chicken steak and let cool. Mix onion, steak and cheese.

To make dumplings, place wrap on work surface and coat half way around edge with egg yolk. Place 1 T steak mixture in center and fold over. Squeeze middle of half circle to seal. The bottom half of circle will remain flat and you will be folding the top half towards the middle 1/4 inch at a time. Just grab the top part of the upper half circle between your fingers and fold towards the middle, then squeeze, sealing to the bottom half. Repeat to the edge, then do the same in the other direction. ( You can go on youtube to see a video of this).

To cook, brown both sides in oil, then place 1/4 C of water in pan, cover and cook several minutes.
Mix ketchup and hoisin for dipping sauce.

These can be made ahead of time and frozen. Just cook the same way when frozen.
