1 3-pound boneless pork loin roast
Salt and Pepper
1 12-oz jar cherry preserves
1/4 cup red wine vinegar
2 tbsp light corn syrup
1/4 tsp each: ground cinnamon, ground nutmeg, and ground cloves
1/4 cup slivered almonds, toasted

Rub roast with a little salt and pepper. Place on rack in shallow roasting pan. Roast, uncovered, at 325º for 2 to 2 1/2 hours. Meanwhile, combine preserves, vinegar,syrup,spices and 1/4 tsp salt. Heat and stir until boiling, reduce heat and simmer 2 minutes. Add almonds. Keep sauce warm. Spoon some sauce over roast to glaze. Return to oven until meat thermometer reads 170º, about 30 minutes, basting with sauce several times. Pass remaining sauce with roast.

GREAT holiday main dish. Makes the house smell like Christmas. I usually double the sauce recipe to allow plenty to pass at the table. Besides, it's so easy even the gals can do it.
