2 19-oz cans lentils, drained and rinsed
1 large carrot, diced
2 green onions, sliced
1 sweet red pepper, chopped
1 stalk celery, diced
1/2 c shredded Asiago cheese
2 tbsp chopped fresh parsley

Dressing:
1/4 c EVOO
1/4 c red wine vinegar
1 tsp Dijon mustard
1/2 tsp each dried oregano/salt
1/4 tsp pepper

Directions:
Directions:
Boil 3 cups water, add carrot and lentils, simmer until carrots are tender. Drain and let cool.
Dressing: In large bowl, whisk together oil, vinegar, mustard, oregano, salt, pepper. Add lentil mixture, onions, red pepper, celery, cheese and parsley; toss to combine. Cover and refrigerate for up to 1 day.
