2 envelopes Knox Unflavored Gelatin
1 cup sugar
1/4 teaspoon salt
2 egg yolks
1 cup milk
1 teaspoon grated lemon rind
3 cups creamed cottage cheese (24 ounces), sieved
1 Tablespoon lemon juice
1 teaspoon vanilla
2 egg whites, stiffly beaten
1 cup heavy cream, whipped

For crumb topping:
2 Tablespoons melted butter
1 Tablespoon sugar
1/2 cup graham cracker crumbs
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

Directions:
Directions:
In the top of a double boiler, mix together gelatin, sugar and salt. Beat together egg yolks and milk; add to gelatin mixture. Cook over boiling water, stirring constantly until gelatin is dissolved and mixture thickens, about 10 minutes.

Remove from heat. Add lemon rind and cool. Stir in cottage cheese, lemon juice and vanilla. Chill, stirring occasionally, until mixture mounds slightly when dropped from a spoon.

While mixture is chilling, mix all ingredients for crumb topping together.

Fold stiffly beaten egg whites and whipped cream into chilled gelatin mixture.

Turn into a square 8”- or 9”-inch pan and sprinkle top with crumb mixture. Chill until firm.
