"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
4 large Portobello mushroom caps
1/4 c. Balsamac vinegar
2 Tbsp. olive oil
1 tsp. dried basil
1 tsp. dried oregano
1 Tbsp. minced garlic
Salt & Pepper to taste
Sliced Provolone cheese

Directions:
Directions:
Cut stems off mushrooms and place smooth side up on plate. In a small bowl, whisk together vinegar, oil, basil, oregano, garlic and salt & pepper. Pour over mushrooms. Let stand at room temp. for about 15 min. or so, turning twice and basting each time with mixture.
Preheat grill for medium-high heat - or set up broiler on low broil.
Brush grate with oil. Place mushrooms on grill over medium-high heat. Reserve marinade for basting. Grill for 5 - 8 minutes on each side or till tender. Brush with marinade frequently. Top with cheese during last 2 minutes of grilling.
(Or: Broil on a rack in a pan on low broil and cook using the grilling instructions. Placing mushrooms on a rack in a pan will keep them from getting soggy in the juices.)
Serve cheese-topped mushroom cap on a bun with a slice of tomato.
