1 lb. ground beef
1 med. onion, chopped
2 cans beef broth
3 stocks of celery, chopped
3 potatoes, chopped
3 tomatoes, chopped (or 1 can tomatoes)
3 carrots, chopped
1 can whole corn, drained
1 bay leaf
pinch of basil
salt and pepper

Directions:
Directions:
Brown ground beef and onions in a large saucepan or Dutch oven. Add remaining ingredients, cover with water. Bring to a boil, then reduce heat to low and simmer for at least 30 minutes (longer is better). This also works well in a crockpot.

This makes a good thick soup on a cold day. I often tweak it depending upon what vegetables I have on hand. If you leave out the potatoes, it works well as a "diet soup". This was one of Grandma D's.
