1 box cavatappi or elbow macaroni, cooked al dente
3 T butter, divided
2 T flour
1 1/2 cup milk
1/2 cup light cream
1 tsp mustard powder
3 cups shredded cheese (I use a mix of cheddar and gouda)
1 cup panko bread crumbs
salt and pepper to taste

1. Preheat oven to 400º. Pour cooked noodles into large casserole dish.
2. Over medium heat, melt 2 T butter, then whisk in flour. Cook for several minutes, stirring, until lightly browned and flour is cooked.
3. Add milk, stirring constantly, until all roux is incorporated. Add cream and mustard powder and bring to slow boil.
4. Reduce heat to low and add shredded cheese a handful at a time, stirring until each addition is incorporated before adding more. Cook for two minutes, stirring constantly, or until smooth. Salt and pepper to taste. Pour over noodles and mix well, coating all noodles.
5. Melt remaining 1T of butter in small saucepan. Add breadcrumbs and stir. Cook several minutes until lightly browned. Sprinkle over noodles.
6. Cover with foil and bake for 20 minutes. Remove foil and cook for 5-10 more minutes, or until top is browned and cheese is bubbly.
