1 1/2 cups onion chopped
1 cup celery finely chopped
2 med italian frying or bell peppers finely chopped
2 cloves garlic minced
2 tbsp olive oil
2 tbsp butter
1 can (15 oz) tomato sauce
1 cup water
2 tsp fresh parsley chopped
1 tsp salt
1/8 tsp cayenne pepper
2 bay leaves
1 lb shelled and deveined shrimp
3 cups cooked rice for serving

Directions:
Directions:
Heat large sauce pan, add oil and butter. When melted saute onions, celery, peppers, and garlic until onion is tender. Stir in tomato sauce, water and seasonings. Simmer uncovered 10 minutes. Add extra water if needed. Stir in shrimp. Heat to boiling then lower heat to medium, cover and simmer until shrimp are pink and tender, about 10 minutes. Serve over rice.
