1 c. stone ground yellow cornmeal
1 c. all purpose flour or whole wheat pastry flour
1/4 c. brown sugar
1 T. baking powder
3/4 t. salt
1 t. soda
2 eggs
1 1/8 c. buttermilk
1/4 c. butter (1/2 stick)

Preheat oven 400º

Spray cast iron skillet 10 inch or add 1 T. bacon grease

Whisk cornmeal, flour, sugar, baking powder,soda, salt.
Measure buttermilk, whisk in eggs. Add to dry ingredients.
Pour melted butter over top of batter and mix all until moistened and blended but not overmixed.
Can add extra ingredients like bacon, cheese, corn, green chiles now).

Bake 20-25 minutes until golden at edges and center springs back when touched lightly.
