2 c. hot mashed potatoes
2 T. butter, softened
1 T. milk
1 tsp. salt
1 c. all-purpose flour

Beat together potatoes, butter, milk, and salt. Cover and chill thoroughly. Turn out on floured surface. Sprinkle with half of the flour. Knead for 8 to 10 minutes, gradually kneading in remaining flour. Divide dough into 8 or 16 portions; shape into balls. On floured surface, roll each small ball to 6 inch, paper thin circles; large balls to 9 inch circles. Roll dough around rolling pin to transfer to hot, greased skillet. Cook until lightly browned, 2 to 3 minutes. Turn and brown second side, 2 to 3 minutes more. (Should be limp, not crisp) Repeat with remaining dough. Spread with butter and sprinkle with sugar, if desired.

This is the "small" recipe from Aunt Dorothy's cookbook. I have experimented around, and have found that instant mashed potatoes will work just fine.
