4 c. flour
2 T. sugar
1/2 tsp. salt
2 pkgs. rapid rise yeast
1 c. water
1/4 c. Dijon mustard
2 T. butter
1 1/2 c. ham, diced
1 c. Swiss cheese, shredded
1/2 c. dill pickle, chopped
1 egg, beaten

Set aside 1 cup of flour for later use. Mix remaining flour, sugar, salt and yeast into a bowl. Heat water, mustard and butter to 125-130º, stir into flour mixture. Mix enough reserved flour to make a soft dough. Knead 4 minutes. On a greased baking sheet, roll dough to 14x12". Sprinkle ham, cheese and pickle down the center third of the dough. Make cuts from filling to dough edge at 1" intervals along each side of filling. Bring strips from opposite sides of filling together; twist and place ends at an angle across filling; cover. Place large shallow pan on counter, filling half-full with boiling water. Place baking sheet with loaf over pan and let rise for 15 minutes. Just before placing in the oven, brush top of bread loaf with the beaten egg. Bake at 375º for 25 minutes. Serve warm.

I usually double this recipe to make two loafs because it is so good as left-overs the next day. We like having this with a bowl of soup.
