1/2 c. butter
1/2 c. chopped onion
1/2 c. chopped celery
1/2 c. fresh parsley, chopped
2 c. soft bread crumbs
1 t. dried sage
1/4 t. nutmeg
1 1/2 t. salt, divided
1 1/2 t. sugar
1/2 t. black pepper
1/2 lb sausage meat, broken up
1/2 c. white wine
1 crown roast of pork, 7 lbs

Directions:
Directions:
Melt butter in a large skillet, then add onion, celery and parsley and cook until tender. Add bread crumbs, sage, nutmeg, 3/4 t. of salt, 1 t. sugar, pepper and sausage and cook, stirring occasionally, until sausage is done, about 10 minutes. Add wine and simmer for 3 minutes. Sprinkle inside of roast with remaining 1/2 t. salt and 1/2 t. sugar. Fill center with stuffing. Cover stuffing and tips of bones with foil. Place in roasting pan and bake in 350 over about 3 hours, until meat thermometer reaches 175.
