2 cubes butter
1 c. celery, diced
1 c. carrots, diced
1 c. onions, diced
2 c. flour
1 tsp. dry mustard
8 c. chicken stock or broth
6-8 c. Cheddar cheese, grated
4 T. Parmesan cheese, grated
11 oz. flat beer
2 c. ham, diced (I've also used bacon)

Directions:
Directions:
Saute vegetables in butter until done, but not browned. Blend in flour, mustard and chicken stock. Cook for 5 minutes. Blend in cheese and beer. Stir in ham and let simmer for 10 minutes. Season and serve with your favorite French bread.

In 1977, John and I went to the Coburg Inn in Coburg and had this soup with our dinner. They had the soup recipe on recipe cards on the table. I've made it ever since! One of our favorite soups and pretty easy to make!!
