1/4c soft shortening
2T water
1 pkg yellow cake mix
1 egg
1C flaked coconut

Directions:
Mix above into dough and pat into greased 9x13 pan. Bake at 350 15-20 min until golden (crust is still soft when done)

Prepare lemon pit filling mix (use part water and part lemon juice) Pour over cooled crust & chill

Top with whipped cream crust and chill

Top with whipped cream. 1 pint. Decorate with maraschino cherries
