1 chicken de-boned & cut into bite size pieces
2 c. cooked wild rice
2 T. butter
1 T. minced onion
1 can water chestnuts
1/4 c. chopped celery
1/4 c. flour
4 c. chicken broth
1 can mushrooms drained
1 c. cream
1/4 c. dry sherry
parsley or chives and salt to taste.

Directions:
Melt butter in pan, saute onions - celery. Blend flour gradually. Add broth, stirring constantly until thick. Stir in rice, chicken and salt. Simmer 5 minutes. Add mushrooms, blend in cream and sherry. Heat to serving temperature.

EXCELLENT! A very rich soup, serve with bread or rolls.
