1 c. pumpkin
1 c. sugar
1/2 c. oil
1 egg
1 tsp. vanilla
Cream together above ingredients.
Add:
2 c. flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 c. chocolate chips
Optional: raisins or craisins

Bake 350º ~ 15 minutes
Makes about 1 1/2 dozen.

Mom would put chocolate frosting on these, I find them yummy as is. Be careful, you won't be able to stop eating them.
When David was in Afghanistan in 2005, Amanda made a batch and sent them to David. These are one of his favorite cookies. Amanda vacumn packed them thinking that it would keep them fresh. We think that it sucked out all of the air, because David said they tasted like cardboard. Ah, memories. :)
