2-4 tilapia fillets
2 tablespoons melted butter
salt and pepper
2 1/2 tablespoons olive oil
3 clove garlic, finely minced
2 green onions
3/4 cup chopped fresh cilantro
1 cup heavy cream
1 tablespoon lime juice
salt and freshly ground black pepper, to taste

Heat oven to 375º

Combine melted butter, salt, pepper, 1 clove minced garlic, 1/4 cup cilantro, a splash of lime juice, 1/2 tablespoon olive oil. (If you have a seasoning that you like, add some of it to taste as well. I use Mrs. Dash table blend)

Line a baking pan with foil; spray with nonstick cooking spray. Brush fillets lightly with butter mixture, pour any remaining mixture on top and arrange in the baking pan. Bake the fish for 20 to 25 minutes, or until the tilapia is cooked through.

Cream Sauce:
Heat 2 tablespoons olive oil in small saucepan over medium heat; saute the garlic and onion for 1 to 2 minutes. Add cream and bring to a simmer. Simmer for about 3 to 4 minutes to reduce slightly. Stir in 1/2 cup cilantro, 1 tablespoon lime juice, salt and pepper to taste.(If you have a seasoning that you like, add some of it to taste as well. I use Mrs. Dash table blend) Simmer for about 1 minute longer. Drizzle over cooked tilapia to serve.

It's not as hard as it might look at first glance, and it tastes great! I suggest serving over pasta. The sauce should make plenty for 4 servings. But the butter mixture is only enough for about 2 tilapia fillets. Adjust according to how many you are making.
