Ingredients: 16 oz Elbow Macaroni 1 stick unsalted Butter 3 tbs Flour 1 1/2 cups Whole Milk 2 Eggs 12 oz Shredded Sharp Cheddar Cheese (divided) 4 oz Velveeta "Cheese" 1/2 Cup Yellow Mustard Salt and Pepper

Directions:1) Preheat oven to 350º 2) Boil Macaroni in salted water until tender (Past Al Dente). Drain and pour into a 9x11 baking dish. Add 8oz of shredded cheese, pepper to taste and 1 tsp of table salt to the hot noodles and stir to combine. 3) Heat butter in a large pot over medium high heat until foaming subsides. Add flour and stir for 2 minutes. Add milk and reduce heat to medium. Sir Frequently until just steaming being careful not to scorch (Use a double boiler if you have the attention span of a three-year-old). 4) In a small bowl, lightly beat the eggs. Add about a 1/3 of a cup of the warm milk and stir to temper the eggs. Add Egg mixture to the pot of warm milk. Add velveeta to pot and stir until melted. Stir in mustard and 1/2 tsp pf Salt and Pepper. 5) Stir mixture into noodles and add salt and pepper to taste. Cover with foil and bake for about 45 minutes or until it doesn't jiggle. Remove foil and add the remaining 4 oz of shredded cheese to cover and return to oven until melted. Remove and let stand a few minute before serving. |
