Ingredients: 1 rotisserie chicken from the store ( You can bake off your own chicken if you wish but this is so much easier!) 2 cups diced celery (Approximately) 1 can sliced Water Chestnuts, drained 2 cans Cream of Celery Soup 1 can of Mayonaise 2 Tbs Lemon Juice
1 Bag of Chinese fried Noodles

Directions:Remove the meat from the breasts and thighs of the chicken. Dice this meat and add approximately the same amount of diced celery. Add the sliced water chestnuts. In a separate bowl mix together the soups, mayonnaise, and lemon juice. Add to the chicken mixture and turn into a greased casserole dish. Top with the noodles pressing the noodles down into the top of the casserole. Bake @ 350º for 45-1 hour. |

Notes: I learned this recipe while I was the Food Service Manager at Cottage Grove Place in Cedar Rapids, Iowa. This was an often requested luncheon dish by the residents who lived there. I loved it and when I prepared it for Mom, so did she! Andrew hates celery so he picks it all out but he likes everything else in this casserole. I have tried adding several other Oriental types of veggies to the casserole with varying degrees of success. I can honestly say to never ever add bean sprouts as the add a bitter flavor to the casserole.
This recipe allows one to get 2 meals from one chicken!
Save the legs wings and carcass for another use, I generally cover them with water and make a rich broth from the remains of the rotisserie chicken to use at another time. After the broth has simmered for about an hour strain the broth and remove the meat from bones and add back to the broth. Adjust the seasoning to your liking. For chicken and noodles add some dehydrated onions, a bay leaf, a couple of whole cloves, a couple of whole black peppercorns, and a little celery. Then just add your noodles and you have chicken and noodles! If you want a Chinese style broth simply use a slice of fresh ginger and a Tablespoon of Soy Sauce instead of the other seasonings. Add some sliced green onions and some sliced fresh mushrooms and you have a flavorful oriental soup base!
