4 slices bacon, diced
1/2 bunch fresh thyme, chopped
Olive oil
Butter, large knob
2 leeks, washed and diced
sea salt and freshly ground pepper
5 to 6 cups cooked turkey meat
2 heaped tbsp flour
3 cups chicken stock
2 tbsp of creme fraiche
1 pkg puff pastry
1 egg, beaten

Directions:
Directions:
Preheat oven to 375º. Saute bacon and thyme in olive oil and butter. Add leeks and cook 3 mins. Add salt and pepper, cover and cook over low heat until tender. Add turkey meat and stir. Add flour and stir. Add chicken stock and creme fraiche. Bring to a boil. Season to taste.

Place turkey mixture in baking dish approx 22 x 30 cm. Roll out pastry big enough to cover dish and lay pastry on top of baking dish. Tuck under and score pastry diagonally. Brush with beaten egg.

Cook in oven 35 to 40 minutes.

Leftover gravy can be used in place of some of the chicken stock, as long as the total amount of broth is 3 cups.
