A small yeast cake is 1/3 of a 2 oz. yeast cake or 7 grams of dry yeast (1 .25 oz. package) or 2 1/4 teaspoons of dry yeast for 0-4 cups of flour.

A medium yeast cake is 2/3 of a 2 oz. yeast cake or 14 grams of dry yeast (2 .25 oz. packages) or 4 1/2 teaspoons of dry yeast for 4-6 cups of flour.

A large yeast is 1 2 oz. yeast cake or 21 grams of dry yeast (3 .25 oz. packages) or 6 3/4 teaspoons of dry yeast for 8-12 cups of flour.

2+2/3 is 1 1/3 of 2 oz. yeast cake or 28 grams of dry yeast (4 .25 oz. packages) or 9 teaspoons of dry yeast for 12 - 16 cups of flour.

3+1/3 is 1 2/3 of 2 oz. yeast cake or 35 grams of dry yeast (5 .25 oz. packages) or 11 1/4 teaspoons of dry yeast for 16 - 20 cups of flour.
