1 12-oz jar creamy or chunky peanut butter, (1- 1/4 c.) I use Creamy Peter Pan©
2 1/4 c. all-purpose flour
1 c. margarine, softened (do not use butter - for best results)
3/4 c. sugar
3/4 c. packed light brown sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. vanilla extract
2 lg eggs

In large bowl measure all ingredients. With mixer at low speed, beat until blended. Increase speed to medium until well mixed, occasionally scraping bowl with rubber spatula.

Preheat oven to 350º Shape dough into 1- 1/2" balls and place 2 inches apart on ungreased cookie sheet. Flatten each ball slightly with fingers. Dip fork in flour and press across top of cookie; repeat at right angle to flatten to 2" in diameter.

Bake 15 minutes, or until browned.
Yields: 4 1/2 dozen.

We like these baked "well done" for a stronger peanut flavor. My husband prefers these cookies to a birthday cake.
