**DON'T USE MINUTE RICE**
4 cups COLD cooked rice
3 eggs lightly beaten with 1 tbsp water
salt to taste
2 tbsp oil
3 scallions, chopped
2 tbsp soy sauce
1 cup cooked pork, chopped

Directions:
Directions:
Stir rice with fork to separate grains. Heat oil in medium high wok or skillet, add scallions and salt and stir fry for approx. 30 seconds. Add pork and stir fry for 2 minutes until pork is heated through. Add rice and stir fry until each grain is coated in oil. Add eggs, stir fry quickly until well-blended, and eggs are set. Blend in soy sauce and serve immediately.

Check out the egg foo young recipe. That with this rice makes a fantastic Chinese meal. I use pork for this but any meat will do and you can make it vegetarian if you like.
