1 1/4 c. white sugar
1/3 c. oil
2 eggs, slightly beaten
1 1/2 c. mashed cooked sweet potatoes or yams
1 c. sliced prunes
1/2 c. nuts, chopped
1 3/4 c. flour
1/2 tsp. baking soda
1/4 tsp. baking powder
3/4 tsp. salt
1/4 tsp. nutmeg
1/2 tsp. cinnamon

Sift dry ingreds. together and then sprinkle over prunes and nuts. Stir slightly. Blend the oil and sugar in a small bowl and add egg and yams to this mixture. Add both mixtures together. Bake at 350º for 1 1/2 hours. Use a greased 9" x 5" loaf pan.

Personal Notes:
The 1 1/2 hrs. for cooking seems like a long time. Bake for 50 - 60 mins. Then check this every 15 mins. to see if done.
