1/2 cup chopped onion
2 Tbsp butter
Six eggs
1/2 cup half-and-half milk
2/3 cup cooked rice
1 cup grated American cheese
Salt and pepper to taste

Directions:
Directions:
Suate onion in butter until golden in a frying pan.

In a bowl beat eggs and milk until foamy. Add rice, cheese and seasoning. Pour this mixture into the frying pan with the cooked onion. Cook on medium heat and stir frequently until eggs are cooked through.

A tasty way to use up leftover rice from the night before.

This is also an excellent way to incorporate another serving of whole grain into your daily intake, something that can difficult to do on a Gluten Free diet.
