8 to 10 yukon gold potatoes
1/2 vidalia onion (diced)
4 oz cream cheese
stick of butter
half and half
sea salt and cracked pepper

Directions:
Directions:
1.Saute diced onion until carmel colored set aside
2.Boil potatoes until tender (do not over boil or you will 'boil' out the taste
3.Return potatoes to pot and let dry out over low heat for at least 4 minutes.
4.Add butter, cream cheese salt and cracked pepper to pot until butter & cream cheese is melted.
5.Add half and half to pot (bring mixture to boil)
6.Mash potatoes and stir in cooked onion
