Pork Crown Rib Roast-1-2 ribs per person

Remove roast from refrigerator about 1 hour before cooking. Preheat oven to 450°. Wipe roast with a cloth. Protect the ends of the bones by covering with aluminum foil. Immediately after putting the roast in the oven, reduce heat to 325°, allowing 25 to 30 minutes to the pound. If the crown is not to be filled with the dressing, omit covering the bones and cook the roast upside down. Serve filled with a cooked vegetable; or, if the roast is to be stuffed, remove it 1 hour before it is done and fill the center with a sausage dressing or other favored dressing. Return the roast to the oven and complete cooking.
