2 cups unsalted butter, softened
2/3 c firmly packed confectioners' sugar
3 Tbsp orange zest
4 1/2 c flour
1/2 tsp salt

Directions:
Directions:
In a medium bowll,combine butter and confectioners' sugar. Beat at med speed until creamy, about 2 min. Add orange zest, beating until combined. Add flour and salt, beating to combine well. Wrap dough in plastic wrap, and refrigerate for 1 hour. Preheat oven to 350º . Line baking sheets with parchment paper. Roll dough into 1-inch balls. Place 1 inch apart on prepared baking sheets. Bake for 15-17 min, until set, but not browned. Let cool on pans for 5 min. Roll in confectioners'sugar. After cookies have cooled completely, roll in sugar a second time.
