3 Bananas (over ripe/mostly brown to black)
3/4 cups Light Brown Sugar
2 Large Eggs
1/2 cup Wesson Oil2 cups Sifted Flour
1 tsp. Table Salt
1 tsp. Baking Soda
1/2 cup Chopped Walnuts (optional)

Directions:
Directions:
1) Preheat Oven to 350º and adjust rack to middle position. (If using large loaf pans, increase temp to 375º.)
2. Mash Bananas with sugar in a medium bowl with a fork. Stir in eggs and oil with a rubber spatula until combined but still slightly lumpy. Set Aside.
3. Whisk sifted flour, baking soda and salt in a large bowl.
4. Add the wet ingredients and walnuts (if using) to the dry and stir until just incorporated.
5. Evenly fill three, unprepared small loaf pans with batter and bake for 30 minutes or until a toothpick comes out clean. Cool for five minutes in the pans. Remove bread from pans and let cool completely on a wire rack Wrap in plastic wrap and store in a cool, dry place.
* if using large loaf pas, increase baking time to 50 minutes.
