Ingredients: # 2 lbs frozen hash browns # 1/2 cup margarine or 1/2 cup butter, melted # 1 (10 1/4 ounce) can cream of chicken soup # 1 pint sour cream # 1/2 cup onion, peeled and chopped # 2 cups cheddar cheese, grated # 1 teaspoon salt # 1/4 teaspoon pepper
Topping # 2 cups crushed corn flakes # 1/4 cup melted butter

1. 1 Preheat oven to 350°F and spray an 11 x 14 baking dish with cooking spray. 2. 2 Mix the above ingredients together, place in prepared pan.
Saute cornflakes in 2nd listed butter and sprinkle on top. Bake for 45 minutes or until brown on top.

Notes: In October of 2009 Connie and I went to breakfast at the Cracker Barrel in Madison, Georgia where we had this casserole with our meal. I remarked about how good it was and Connie told me that she had the recipe. A week later Derek and Andrew flew into Atlanta and the first morning they were in town Connie fixed this casserole along with smoked breakfast sausage that she had purchased from the Cracker Barrel restaurant! True to being the hostess with the mostess, Connie made the same breakfast for us Christmas morning 2010! I will forever be reminded of my wonderful visits to Connie's homes over the years and especially when I prepare this recipe!
