6 lbs beef
6 lbs pork
1/8 allspice
½ tsp nutmeg
1 tsp brown sugar
1 tbsp Mustard seed
2 tsp black pepper

Directions:
Directions:
In large bowl mix meat with rest of ingedients and mix well. Regrind this mixture and stuff into casings, link every 4 inches.

Hang sausages in smoke house for 2-3 hours. Simmer sausage in water for 10 minutes or until they float. Immerse sausages in cold water to cool. When cool hang them to dry. Store in plastic bags and freeze.

To serve reheat sausage with small amount of water in frying pan or microwave oven.
