2 cups sifted all-purpose flour
3 teaspoon baking powder
1/2 teaspoon salt
1/3 cup shortening
3/4 cup milk

Directions:
Directions:
Sift dry ingredients into bowl. Cut in shortening till consistancy is like coarse crumbs. Make a well, add milk all at once. Stir quickly with fork just till dough follows fork around bowl. Turn onto lightly floured surface. Knead gently 10 to 12 strokes, Roll or pat dough 1/2 inch thick. Dip 2 1/2 inch biscuit cutter into flour. Cut dough straight down. Bake on ungreased baking sheet at 450º about 12 minutes. Makes 10.
Drop biscuits: Increase milk to 1 cup. Drop from teaspoon onto greased baking sheet. Bake at 450º about 12 minutes. Makes 12
Buttermilk Biscuits:
Sift 1/4 teaspoon soda with flour mixture. Substitute buttermilk for milk in recipe.
