1 box white cake mix
2 t coconut extract
1/2 c sugar
1/2 c water

Icing:
1/2c water
1 2/3 c sugar
1/2 t salt
4 egg whites
1/2 t cream of tartar
2 pkg frozen coconut, thawed

Directions:
Directions:
Prepare cake mix according to directions with the addition of 1 t coconut extract. Bake in 8 or 9 inch round pans. Cool cake and remove from pan.

Microwave 1/2 c sugar, 1 t coconut extract, and 1/2 c water until sugar dissolves. Pour 1/2 of this mixture over bottom layer of cake, top with icing and repeat with second layer. The water and sugar mixture makes the cake extra moist. After icing the cake, top with 2 pkgs frozen coconut, thawed.

Directions for icing: Boil 1/2 c water with 1 2/3 c sugar and 1/2 t salt. Boil until the mixture forms a thread when poured from a spoon. Beat egg whites with 1/2 t cream of tartar until soft peaks are formed. Pour sugar mixture over egg whites while continuing to beat. Continue to beat until mixture is glossy.
