1 c. butter, softened
1/2 c. sifted powdered sugar
1 t. grated orange rind
1 t. orange extract
2 c. all-purpose flour
6 oz. semisweet chocolate
3/4 c. finely chopped almonds, toasted

Directions:
Directions:
Beat butter at medium speed till creamy; gradually add powdered sugar, beating well. Stir in orange rind and orange extract. Gradually, add flour, beating well. Cover and chill 1 hour.
Shape dough into 2 1/2" by 1/2" log on a floured surface. Place logs on ungreased cookie sheets. Flatten three-quarters of each log lengthwise with tines of a fork to 1/4 " thickness. Bake at 350º for 12 minutes. Cool slightly on cookie sheets; remove to wire racks, and let cool completely.
Place chocolate in top of a double boiler. Bring water to a boil. Reduce heat to low; cook until chocolate melts. Dip unflattened ends of cookies in chocolate; roll chocolate tip in chopped almonds. Place on wire racks; let stand till chocolate is firm.
