1 c. butter
1 c. brown sugar
1/2 c. white sugar
1 egg, well beaten
1/2 c. water
1 1/2 c. flour
1 1/2 c. oatmeal
1 tsp. baking powder
1 tsp. baking soda
1/2 c. coconut
1 tsp. vanilla
pinch of salt

Directions:
Directions:
Mix butter, sugars, eggs, water and vanilla in one bowl and set aside. Mix flour, baking powder and soda, oatmeal, salt in another bowl. Stir two mixtures together. Roll into balls. Flatten with wet fork once you have placed them on baking sheets.
Bake at 350º for 12 mins. Makes 6 doz. Remove from cookie sheet while still warm.

These cookies were used with Date Filling to ship to Allan while he was serving in Vietnam. Use only 3/4 c. butter, if planning to add date filling.
