3 cups hot water
2 cups mashed potatoes (mix potato flakes with enough
hot water to make 2 cups)
1 cup melted margarine or butter
1/2 cup sugar
1 tbsp. salt
3 well beaten eggs
Add:
3 cups flour with 3 tbsp. dry yeast stirred in and mix well.

Directions:

Mix in enough flour to make soft-medium soft dough. (around 7 - 9 or so cups - depends of type of flour)

Let rise until double in size, knead down. Form into balls, place on greased pan and let rise again.
Bake at 375º for 12-15 minutes.
Melt a little butter and spread on rolls while still hot.

Makes about 48 rolls

Can use leftover mashed potatoes - be sure the lumps are out. Works great.
