4 1/2 T. corn starch
1 c. sugar
1/4 tsp. salt
1 1/2 c. boiling water
3 eggs, separated
6 T. lemon juice
2 tsp. grated lemon peel
2 tsp. butter

Meringue:
3 egg whites (from the eggs above)
pinch of salt
1/2 tsp. vanilla
1 tsp. cream of tartar or corn starch
3 T. sugar

Directions:
Directions:
In a double boiler pan, mix corn starch, sugar, and salt, then add boiling water stirring all the time. Cook 10 mins. Slightly beat egg yokes, lemon juice and rind together and add to cornstarch mixture. Cook 3 mins. Add last 3 ingred. Cool. Add some of meringue into mixture if you want. Pour into 9 inch pie shell. Cover with meringue.

Meringue: 3 egg whites and pinch of salt beat until stiff. Gradually add to the egg whites, while beating, the 3 T. sugar, and 1 tsp. cornstarch, or cream of tartar. Beat until stiff and glossy peaks form. Place on pie and brown in oven 350º for 10 to 15 mins. Really watch it! It might get too much!

Need pie crust to be ready before starting. Some people like to fold some of the meringue into the lemon filling before placing the meningue on top of filling.
