2 lbs split peas
2 to 3 lbs smoked ham chopped in 1/2" squares
3 cups yellow onions finely chopped
1/2 tsp marjoram
1/2 T minced garlic
4 stalks celery finely chopped
1 tsp pepper
1 tsp salt

Directions:
Rinse peas in colander & look for foreign objects
Cover peas with 4 quarts cold water, bring to a boil then simmer 2 minutes
Remove from heat, cover and let stand for an hour.
Add the other ingredients down through salt, bring to a boil then simmer 2 hours stirring occasionally
Uncover, add 1/2 tsp marjoram and 1/2 tsp minced garlic and simmer for 45 minutes
Let cool, fish out bones and refrigerate over night
Next day, remove gelatin from the top and warm on low heat stirring regularly
Season to taste
Serve with seasoned croutons, crackers, etc.
