1 small courgette (zucchini)
1 small carrot
1 small potato
1/2 carrot
10ml (2 tsp.) sunflower oil

Directions:
Directions:
Grate the potato, carrot & courgette into a bowl and mix together thoroughly. Place vegetable mixture onto paper towels and lightly press down to soak any excess liquid. Heat oil in frying pan and spoon vegetables into pan to form 8 rounds. Flatten slightly with a fork and fry for 5 minutes, turning once until the potatoes are thoroughly cooked and the rosti is golden brown on both sides. Lift out of pan and cool slightly before serving.
