4 c uncooked white rice, 1 1/2 sticks butter, 4 large portabella mushrooms, 1 large sweet onion-chopped, salt and pepper to taste.

Cook rice. Melt butter at medium-high heat in large pan. Add onion and saute until clear. Add cubed mushrooms and saute for 1-2 minutes. Add cooked rice and salt and pepper. Stir.
