1 bag of small red beans, pre-soaked
1 to 1 1/2lbs smoked sausage
-for spice use Andouille sausage
1 large green or red bell pepper, diced
1 medium onion, diced
3-4 stalks of celery chopped finely
1-2 ham hocks
2 bay leaves
1 - 8 oz can tomato sauce
2-3 tbsp. Cajun spice (we use Tony's) or to taste
2-3 tbsp. Old Bay Seasoning or to taste
3-4 shakes of hot sauce (we prefer Frank's)
Cooked rice

Put all ingredients into slow cooker or large pot and add just enough water to cover all. Stir well; cook on low until beans are very soft - in slow cooker it will take about 4-5 hours; Once beans are soft, using a wooden spoon mash about half the beans against the sides of the pot and stir. Continue cooking another 30-45 minutes or until desired consistency. Serve over rice.

Leftovers store well mixed with leftover rice and taste even better next day!
