2 lb. jumbo shrimp
1 c. flour
1 tsp. sugar
1/2 tsp. salt
1 egg, slightly beaten
1 cup ice water
2 Tbsp. virgin coconut oil
1 tsp curry powder
2/3 c. grated coconut
Vegetable oil

Directions:
Directions:
Shell and de-vein shrimp, leave the tail intact. Pat dry, make sure they are really dry or the batter doesn't stick very well! In bowl, combine flour, sugar, salt, egg, water and coconut oil, Beat batter till smooth.
In separate bowl, combine coconut and curry powder.
Dip shrimp in batter and then in coconut mixture.
Deep fry till golden brown.

I found this recipe after falling in love with Red Lobster's coconut butterfly shrimp! I also have tried to imitate the pina colada dipping sauce but with little success. These babies are good on their own though!
