1 lb ground hot pork sausage
1 cup chopped onion
1 cup chopped celery
1 cup chopped green bell pepper
2 - 15oz cans EACH jalapeno; black-eyed peas - undrained
2 - 10oz cans diced tomatoes with green chilies
1 - 11oz can white shoepeg corn, drained
1 - 10z pkg frozen sliced okra
1 tsp salt
1/2 tsp pepper

Directions:
Cook sausage in Dutch oven, stirring until it crumbles and is no longer pink. Drain sausage on paper towels, reserving 1/4 cup drippings in pan; return sausage to drippings in pan. Add onion, celery and bell pepper; saute in drippings over medium-high heat 5 minutes or until tender. Add peas & remaining 5 ingredients. Bring to a boil; cover, reduce heat and simmer 30 minutes or until okra is tender.
