2 T olive oil
1 med onion chopped
2 T minced garlic
salt and pepper
2 T flour
2 Thyme sprigs
1 scallion, sliced
1 red pepper chopped
1 celery rib chopped
1/4 tsp cayenne pepper
1/2 lb andouille sausage sliced
4 c chicken broth
3/4 lb shrimp shelled and deveined
1 T chopped parsley
1/2 cup rice

Directions:
Directions:
In saucepan, heat oil, red pepper, onion, celery, garlic, and cayenne pepper. Season with salt and pepper. Cook until soft. Add sausage and brown. sprinkle flour over mixture. Stir and cook until brown. Add chicken stock and thyme. Simmer for 10 minutes. Add shrimp, simmer until shrimp are opaque. Stir in parsley and rice and simmer until rice is done.
