1/2 c. warm water (110º-115º)
2 pkg. active dry yeast
1 1/2 c. lukewarm milk (scalded)
1/2 c. sugar
2 tsp. salt
2 eggs
1/2 c. shortening
7 1/2 c. flour, all-purpose

Directions:
In bowl, dissolve yeast in water. Measure flour by dip-level-pour method or by sifting. Add milk, sugar, salt, eggs, shortening and half of flour to yeast. Mix with spoon until smooth. Add enough remaining flour to handle easily. Turn onto lightly floured board; knead until smooth (5 min). Round up in greased bowl, bring greased side up, Cover with plastic wrap. Let rise in warm place (85º) until double, about 1 1/2 hrs. If kitchen is cool, place dough on a rack over a bowl of hot water in the oven. Punch down; let rise again until almost double, about 30 min. Shape, let rise and bake in 400º oven for 15-20 minutes in a lightly greased pan.

Scald means to put on low heat until film forms on top. Take off heat. You can also add 1 tsp. of sugar to the yeast mixture, it helps it rise. Soft crisco is best for the shortening.
