2 pounds sweet potatoes;
2 tablespoons vegetable oil;
1 teaspoon curry powder;
1 teaspoon salt

Directions:
Directions:
Preheat oven to 450 degrees. Scrub sweet potatoes and slice them into 1/8 inch thick rounds. Place the potatoes in a large bowl. Combine the oil, curry powder, and salt in a small bowl. Drizzle the curry oil over the potatoes and mix well with your hands. Spread the potatoe slices in a single layer over 2 large baking sheets. Bake the potatoes, turning them once, until crisp, about 15 minutes.
