2 1/2 cups flour
1/2 cup unsweetened Cocoa
2 1/2 tsp. baking powder
3/4 cups butter or oleo
3 eggs
2 TSR. orange rind
1/2 cup milk- can also substitute orange juice
1 1/2 TSR. baking soda
1 TSR. salt
1 TSR. cinnamon
2 cups sugar
2 cups unpeeled, grated zucchini
2 TSR. vanilla
1 cup ground nuts (optional)

Glaze
3/4 cup confectioners sugar
1 T. orange juice
1 TSR orange rind

Directions:
Directions:
Beat butter and sugar until light. Add eggs and beat well. Stir in zucchini, orange rind and vanilla. Add dry ingredients alternately with milk (or orange juice). Add nuts. Pour in greased bunt pan or loaf pans. Bake 1 hour at 350º or until a toothpick comes out clean. Let cool in pan. Glaze.
