2 lbs. of fresh peeled Shrimp
3 tsp of butter
3 tsp of extra virgin olive oil
2 tsp of minced garlic
1/2 cup heavy whipping cream
2 heaping teaspoons of sun dried tomato pesto
One box of favorite pasta

Directions:
Directions:
Start water boiling in your pot with salt and a drizzle of olive oil for pasta ( I usually use Bow Tie Pasta or Linguine). In a large sauce pan add the extra virgin olive oil and the butter ( make sure to use real butter it fuses better). Add garlic and saute over medium/ medium high until all the butter is melted. Add shrimp and continue cooking until all the shrimp is tender and pink (about 6 to 8 minutes).

Add the tomato pesto with a continuous stir until mixed nicely. Add slowly heavy whipping cream and stir vigorously with a whisk until the butter oil and whipping cream fuse as one ( there will not be puddles of oil and it will make a delicious creamy scampi sauce) serve over your favorite pasta!

I usually pull all shrimp over to one side to create sauce on the pan but you can remove shrimp from pan if that is easier for you. I usually garnish with fresh Basil on top ENJOY!
